Eating lots of extra virgin olive oil in your diet means that you’ll have higher HDL cholesterol and lower LDL cholesterol, which is well known as the bad type of cholesterol.
Furthermore, extra virgin olive oil has numerous antioxidants. Antioxidants help make up the immune systems of plants and fruits like olives. In other words, the antioxidant in plants help those plants stay away from disease, and they can help humans stay away from disease as well.

First, if you want to consume more extra virgin olive oil, stop cooking with butter and margarine altogether. Unless you are baking, replace almost all of your butter and margarine with extra virgin olive oil. Next, switch from cream-based salad dressings to vinaigrette-based dressings, and always choose olive oil. Doing these things will help your health in numerous ways.
